What does Sauté mean?

The word Sauté is picked up from the French dictionary. The literal meaning of this word is ‘to jump’. This technique is connected to the method of cooking, i.e. the food is tossed around in the cooking apparatus. The pan and the fat type should be hot enough, that when you add the raw material, it turns brown immediately. 

What is Stir-Frying?

This method is usually applied to Asian cuisines. The food is cut into very similar size pieces. This helps the raw material cook evenly. This also involves a constant movement of the food in the pan. Some pan shaking might also be involved. The heat used should be high, but the quantity of oil used should be less. Stir-frying involves a great technique. Ingredients which take time to cook are usually added first and gradually the other items are added in the order of the time they take to cook. 

What is Sear?

The next time when someone uses this term, then make a note that they wish that you prepare meat or fish for them. The food is turned brown on high flame. This browning caramelizes the natural sugars in the food. This allows the flavor of another layer to emerge. Usually fish is done by searing. But the tougher cases like meat need further steps like braising or roasting. 

What is Braised?

Braised involves slow cooking of pieces of ingredients like meat for long and slow cooking. Anything from endive to poultry can be braised. The process of cooking food slowly and in liquid is termed as braising. The ingredients can range from carrots, onions, and other seasonings and the braising liquid can range from broth to wine to tomatoes. This cooking method also involves cooking with a lid on top. This way the broth condenses on the inner side and self-bastes the dish while it slowly cooks.
